I’m using the simple theme (v.2.0.4.0) as the basis for a very basic charity website.

How do I easily set the font size? I’ve tried reducing the min & max in theme settings but this doesn’t seem to do anything. And the padding for this theme seems totally out of whack – especially around the H1 post title font and around body images.

I haven’t done any HTML/CSS in a while so I’m really rusty. Just want a quick way to tweak the site to suit.

Here is a demo of Simple theme: https://getpublii.com/themes/demo/simple/ , and it works very well, including the font sizer or paddings.
I noticed that you customized your site, so you need to play with CSS to adjust some elements.
